The step towards a Benefit Corporation
In 2021, we embraced this philosophy by becoming a benefit corporation. This decision came to life through the Re-Bread project, which demonstrated the company's pride and commitment to a broader and more sustainable vision of its role in the business world.
The Re-Bread project was an innovative initiative aimed at reducing food waste and promoting responsible resource use. We worked hard to reduce our environmental impact by adopting more sustainable production practices and actively seeking ways to reduce waste in the supply chain.
But the real heart of the Re-Bread project has been its commitment to making a difference in the communities in which it operates.
A special beer
Strongly characterised by the flavour of bread crust , in the production of this beer (strictly artisanal, microfiltered, unpasteurised and produced in an independent brewery, in this case local) unsold bread is used to replace a percentage of barley malt , with a double ethical and environmental advantage: the recovery of food that would otherwise be wasted, clearly, and the reduction in consumption of the malt ingredient, the most present after water in beer.
Specifically, Giacomazzi's first brewing recipe calls for replacing barley malt with micca , a typical Parma bread, which we make with ancient grains grown locally, sourdough starter, and olive oil. The unsold micca are then stored in the lab and dried, awaiting the brewing process.
Balanced and easy to drink, highly drinkable and with a moderate alcohol content (4.9%), it presents itself as a classic artisanal Keller beer, with an opalescent straw color, then releases notes of cereal and bread, in this case artisanal.
