And here we are with the interview with Ilaria Giacomazzi, Enrico's sister, with whom we have already had the opportunity to speak.

Who is Ilaria Giacomazzi?
Ilaria, along with her brother Enrico, represents the third generation at the helm of the family business, an artisanal bakery and pastry shop in the heart of Parma. The business has always championed a strong philosophy of meticulously selecting raw materials and employing artisanal production methods, investing heavily in research and experimentation to create innovative products that delight customers.
Giacomazzi1968 is an artisan workshop where tradition, simplicity, and authenticity blend with creativity and resourcefulness, fueled by renewed passion and enthusiasm.
Today she's the retail area manager and therefore deals with the organization, coordination, and supervision of the stores and the first Bakery Coffee in Parma... But we won't give anything away, she'll tell us all about it directly: let's start the interview!
The interview
Hi everyone, I'm Ilaria and I've been working for the company since 1999, managing the retail side of things. Over the years, I've continued to develop and specialize, initially managing supplies for our stores and B2B customer relations. As the number of stores grew, I expanded my role by taking specialized retail courses. Now, I'm responsible for the complete management of each store, including product selection, displaying them at the counter and in the windows, and training the staff.
Since 2019, we've introduced a new format called "Bakery Coffee" to adapt to market changes and customer demands. This store combines traditional bread sales with a coffee and pastry area. Despite the challenges of Covid and the related lockdown, the opening of Bakery Coffee in November 2019 proved an immediate success. We believe the secret to its success lies in carefully selecting suppliers who share our vision of innovation, high quality, sustainability, and craftsmanship. As a benefit company, we have implemented these fundamental characteristics, which have made our format unique and appreciated by customers.
With the Bakery Coffee format, we've initiated a transformation process that significantly differentiates our existing stores. One of its distinguishing features is the presence of multiple functional areas within the same space. We've selected a specialized roaster, which supplies premium blends exclusively for pastry shops with coffee corners. Additionally, we collaborate with their dedicated Academy, offering our employees the opportunity to train and stay up-to-date on trends and new technologies in the coffee world.
Our pastry department is constantly evolving, as we strive to offer new creations that combine modern and traditional pastry making. As for our bread department, we are committed to using premium flours and natural yeast in our constant pursuit of high-quality bread, pizza, and focaccia.
Our offering is constantly updated to meet the needs of customers who are increasingly attentive to nutritional well-being and healthy choices.
